Smoked Chicken

1. Smoked Whole Chicken

Ingredients:

  • 1 whole chicken (about 4-5 lbs)

  • 2 tablespoons olive oil

  • 2 tablespoons smoked paprika

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 1 tablespoon salt

  • 1 tablespoon black pepper

  • 1 teaspoon cayenne pepper (optional)

  • Wood chips for smoking (hickory or applewood works well)

Instructions:

  1. Prepare the Chicken: Rinse the chicken under cold water and pat dry with paper towels.

  2. Make the Rub: In a bowl, mix the olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

  3. Apply the Rub: Rub the mixture all over the chicken, including under the skin where possible.

  4. Preheat the Smoker: Preheat your smoker to 225°F (107°C). Add the wood chips to the smoker box.

  5. Smoke the Chicken: Place the chicken on the smoker grate, breast side up, and smoke for about 4-5 hours or until the internal temperature reaches 165°F (75°C).

  6. Rest and Serve: Let the chicken rest for at least 15 minutes before carving and serving
