1. Smoked Whole Chicken
Ingredients:
1 whole chicken (about 4-5 lbs)
2 tablespoons olive oil
2 tablespoons smoked paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon salt
1 tablespoon black pepper
1 teaspoon cayenne pepper (optional)
Wood chips for smoking (hickory or applewood works well)
Instructions:
Prepare the Chicken: Rinse the chicken under cold water and pat dry with paper towels.
Make the Rub: In a bowl, mix the olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
Apply the Rub: Rub the mixture all over the chicken, including under the skin where possible.
Preheat the Smoker: Preheat your smoker to 225°F (107°C). Add the wood chips to the smoker box.
Smoke the Chicken: Place the chicken on the smoker grate, breast side up, and smoke for about 4-5 hours or until the internal temperature reaches 165°F (75°C).
Rest and Serve: Let the chicken rest for at least 15 minutes before carving and serving
